chili lime grilled shrimp

1 pound fresh or frozen RAW shrimp, peeled and deviened
1/2 teaspoon red pepper flakes
zest and juice of 1 lime
2 tablespoons extra virgin olive oil
salt and pepper to taste

* put some wooden skewers into a shallow baking dish and cover with water and let soak about an hour, this prevents them from catching on fire while on the grill!

peel and devien your shrimp put in a medium bowl, add lime zest and juice olive oil and pepper flakes, salt and pepper mix and let set about 5 min. * don't let set for much longer as the acid from lime juice will actuall begin to cook the shrimp, you would then habve ceviche, buts thats a whole other recipie.
put your shrimp on the skewers and place on ur grill. DON"T move them for about 2-3 minutes or they will stick, turn and cook another 2-3 minutes or until opaque throughout. Thats it! enjoy them! you could make a lemon butter or cocktail sauce to dip in or eat them as is which is my favorite way.

preheat ur grill so it is VERY hot
